Huevos A La Flamenca is a dish I discovered while sitting in an outdoor cafe in Barcelona one fall morning last year. It was amazing, so amazing I took a picture of it.
With family in town last week, I was looking for a savory breakfast entree, when I remembered the Spanish dish. I checked in my favorite cookbook: "The Essential Mediterranean Cookbook" and found the Spanish recipe listed. While the finished product was a bit different, it still had great flavor. I believe it has officially replaced quiche on my brunch menu.
